We recently had an incident where a project stage was edited from "In Process" to "Closed" to "In Process" again. Is there a way to view the audit trail/history of activity on a project? We would like to know who is changing the stages on the project.

In addition to Dr. Ludwig's recommendations, you could also think about turning on Database Logging on ProjTable for just the Status field. You should be able to see entries that look like this
However, please chose this option with caution, a DB logging has performance impacts depending on transaction volume and activity volume.

The project stage does not have a audit trial or history function related to it.
You can of course adjust it by means of a system modification.
Alternatively, you can think about using security role configurations that would allow only specific users changing the status of a project.
