In this case it does make sense. I needed to create a near exact copy of their company with the only tables omitted being the tables that contain images. This would shrink the backup from 80GB to less than 10MB. Having only data in the database was helpful as I needed to copy this backup to another server with limited space as someone deleted data and I need to compare the previous night's backup to today's backup. Accounting would not be an issue here.

Sorry to disappoint you, but from a business perspective that would make no sense.. ;-)
When you create a new entity, usually what you wanna copy over is the master data (Customers, Vendors, Inventory, Financials).. but not the transactions.
If you want all the transactions, then you just restore the Company A over the Company B and alter the setup, like for a Test company.
If you do a full company restore, then you would go the other way around by removing transactions in the new company by using the GP maintenance to clear out transactional data.
