RE: What all things we should take care when upgrading CRM 2016 on premise instance to Dynamics 365 on premise
I did an upgrade from on premise 2016 8.1 to 365 online 3 months ago. I did not in court any major issue other then the form design is a lot different. Also the 2016 solution had a lot of custom work.
So because you are going from 2016 to 365 on premise it should be easy.
Build a export solution and import that solution in to your 365 on premise.
I did run into a couple of import issue but because I was on 365 online I had to call Microsoft to fix the problem. :-(
