Can I create multiple fixed assets from one invoice? If not, I'm assuming the alternative would be to break the invoice into multiple amounts and post it into A/P has 3 invoices (for example) instead of 1?

Yes - you can create multiple asset records until the total amount of the line item has been applied.
This is the same - whether the invoices come from Payables Management or Purchase Order Processing.
