CRM Dynamic 4.0 "Workflow" Can a workflow be built to update all fields in an Entity??

"Workflows" Can a workflow be built to update all fields in an Entity?? like "Leads" all at the same time, where the records are locked?? because the records were converted and now are in a "Qualified" status. Show all the "Lead" be forced open before the workflow is ran?

We have a full CRM and I have customized it to the point we are now only using (2) entity called "Account" and "Lead" We have all records convert from "Leads" to "Account" with e system convert out of "Leads" entity. I am now going to a (1) entity setup being we are so very basic and customized.

What I trying to achieve with my custom "Workflow" is to take (ALL) data in all records in "Accounts" entity and force the data to update (ALL) "Leads" entity records. I have build mapping from Leads to Accounts and from Accounts to Lead. The last step I believe is needed is to build the "Workflow" so that it will force the updates to take place.

I do not understand the how to create the custom plugin for this action so I am work only with "Workflows"

My CRM 4.0 has been so customized that after I create a workflow I do not see it listed anywhere to trigger it either as a On Demand, Child or Business Unit on change.

Questions:

1. Can a workflow be built to update all fields in an Entity?? like "Leads" all at the same time, where the records are locked??

2. How do I find the workflow I just created?? there are no tool bar launch button or under action there are no execute options.
