So basically when a field on our opportunity is set to Yes I want to be able to create a new opportunity record, which I know is possible. But then I want a task record created for the newly created opportunity record. So in other words the new task will have the new opportunity in it's REGARDING field.
Is this possible?

Yes it is possible.
When you are creating a new opportunity (assuming via workflow)
In the same workflow add a second step>> create task>>set properties of this task>>You can add dynamic or static values
Dynamics values can be from the right hand side of the designer
Click on the regarding field>>on the right hand side first select process and in the second drop down select 'Create (opportunity)'
