Is it possible to attach a document to a fax activity in D365 in the same way that you can for a letter (or other) entity?

You need to add timeline on fax form from Insert tab as shown below.
Once Timeline is added on the form , you will be able to attache documents using NOTES

For document management, initially you need to have an integration with Sharepoint and additionally this will be used to store the document,
If your requirement is to store the document you can definitely use it

I just checked and it is possible to enable Document Management. Wouldn't this be a way (even the preferred way) to do it? Looks like Notes (attachments) is available also. Poor answer.

For Fax activity, unfortunately there is no provision to attach an attachment in MS CRM as of now
