We have installed CIF V2 from app source but while creating a provider API, V2 is not listed. So we have followed your documentation where it is stated to first add your organization to version 2.0 flight and then install channel integration framework. So we are trying to uninstall and install it again but facing problem in uninstalling.

Did you do any customizations in this solution? In my instance I could uninstall it correctly and my version is 1710 (9.1.0.9835) online wave 2.
You could refer to the following posts and if the problem is still exists, you could raise a ticket to Microsoft Support Team for more professional answer.
