Yes, You can create stock-keeping units prior to use variants in the transactions.
The unit cost will reflect average unit cost per variant for each SKU created for each location and variant.
Steps I used :-
Item card created --> related --> warehouse--> stock keeping units. Create stock keeping units for each location and variant combination.
Did few purchase and positive adjustments for each variants. It reflected Average unit cost on the item card for all variants but reflect Unit cost average in the stock keeping for each variant.
Make sure SKU exists before doing transactions.
