Is is possible to see profit% in sales orders (not sales invoices) on line level?
I want to see when I am inserting my sales orders, that for each item I enter I can see the profit% on item level/line level

This field is available but you need to take help from Development partner to show this directly in front of Sales line some where as you required. Please take help from them.
Also you can see it in fact box, see the below image.
