I would like to set up a workflow to send a follow up email to a client when they interact with an email.
Does any one have any suggestions as to how to trigger the follow up email?

We understand your requirement to send a follow up email to the cx but,
Is it you wanted to send a follow up email for each and every email or just the first email?
If in case it is only for the first email, you can use the ARC (Auto Record Creation) rule which has an option to send automatic response to the customer on creating the record
