in a nutshell, it should not affect you negatively unless you started to use any of the features introduced in the rollup (new fields, new entities, new forms.. anything). However, a rollup is a rollup.. If there it involves some database changes, for example, and if something goes wrong (and it can.. I don't think people remove rollups that often), you can be be in trouble. At the very least, I'd take a backup of the database.
Well rollup update are hotfixes,thses release update are to fix issues in your current version of crm.
eg: we had an issues in crm 2011 version where it open only in IE not in chrome.so after installing rollup18 the problem solved.

You can remove rollups from control panel > Program and Features > View Installed Updates and then uninstall by selecting the update.
