Is it possible to read values from the RetailParameters-table from MPOS?
(standard fields and extended fields)
The issue, is that I have some functionality in the MPOS, that should be on or off depending on the parameter in AX.
But I don't know how to read tables from MPOS - is it even possible?

Yes, it's possible - this should be done from Retail server side.
Check for sample: RetailSDK\SampleExtensions\CommerceRuntime\Extensions.StoreHoursSample\StoreHoursDataService\GetStoreDayHours
If your field exists in AX only, not in store database, you should extend store database to include new field and configure data transfer. Details: docs.microsoft.com/.../cdx-extensibility
Yes, you can read the values from RetailParameters table but it is not the suggested approach. You can maintain it in a separate table so that migration should be easy.
Please refer to the Retail extensibility framework for fetching the values from table for more details.
