I am using the CRM online and I would like to know how I can get a team or user GUID value in order to assing it to a taks in CRM>?

Do you want to fetch the GUID on entity form or in plugin?
For entity form, you can use Web API (2016 and above versions) or oData (2013 and above versions).

For plugin, you can use organization service to query user/team entity.
