I'm using Rapidstart for GP2013 for the first time. My default currency needs to be in CAD but it appears that I cannot import unless we set Z-US$ as the default currency. Is there a way to set the currency so it is in CAD and ignores Z-US$?

I have experience the same issue for one of my test migrations. For this case, I have updated the functional currency to CAD(In Rapid Migration custom table)before click import button on the Rapid Migration Tool. I don't remember the table name for this functional currency setup in Rapid Migration Tool. Give me some time I will check and let you know the status and reason for this issue.

Thank you. I created the Test company w/ CAD as functional currency. When I imported the master files successfully it switched the functional currency back to Z-US$. It seems the app clears the multicurrency setup tables and writes it with Z-US$ during the migration process.
First you need to create a sample company and configure this company with functional currency of CAD through manual configuration within GP or using Rapid Configuration tool to configure the company with the functional currency of CAD. After completed the company configuration in GP, then use Rapid Migration Tool to integrate/migrate your data.
Note: If you need any helps regarding the same, please let me know. Because, I have some experience with Tool(Having experience with more than 5 companies migration).
