How can I get workflows that send emails to only show up in timeline and not actually get sent out to users?

I have seen this before, but don't recall what all needs to be done.

In my sandbox environment, I am testing workflows which would send emails.  I don't want the emails getting sent to the actual users, but I still want it see that it worked, and usually it would show up in the timeline then for me to see.  

What do I need to do to have it work this way?

    Hi USA80,

    You could create a email record and set it regarding to the supported entities in the workflow. Something like this:

    Result:

    I have the regarding setup, but still don't see anything.  I see a message in the workflow that says, "You cannot send email as the selected user. The selected user has not allowed this or you do not have sufficient privileges to do so. Contact your system administrator for assistance."

    How can I fix this?

    Please refer to this link:

    "You cannot send email as the selected user" error occurs when attempting to send email as another user (microsoft.com)
