Hi Matt. I'm sure you already have this answer, but for anyone who may be searching for the same: You can restrict projects from your lookups based on status. The setup for this is in Project Accounting > Setup > Project - Status. You can delete closed contracts using the Mass Contract Delete utility - of course you'll want to be sure you make and verify a back up before you go into the window. ;)
