I created a personal Notes view, which lists notes assigned to various entities. I can get to it from Advanced find and it works fine. However, notes is not an entity that can be added to a dashboard as far as I can tell. Is there something I'm missing?

You aren't missing anything - there is just a limitation with the system preventing it. In order to display Note data you could potentially use a custom SSRS report or a web resource that uses JavaScript or Silverlight to retrieve and display the data.
