Could someone explain my the difference between "Sever-Side Synchronisation or Email Router" - "Microsoft Outlook for Dynamics 365"
If I want to manually select which email is being tracked, without necessary tracking all emails from that person, what settings would it be?

Do you mean that you want to disable automatic tracking of emails from a specific contact, just enable manual tracking?
Unfortunately, this is impossible.
Automatic tracking and manual tracking of emails are either all disabled or all enabled, and we can't just enable manual tracking.
