As screenshot shown:
1.Single Record Auditing: Logs a record when opened
2.Multiple Record Auditing: Logs all records displayed on an open page.
This simply means that it will log access of grid views, advanced search, sub-grids on a form etc.
Single recording auditing to track when a record is opened (Retrieve message) and Multiple record auditing to track when a list of records are retrieved, either in a view or through an Excel export (RetrieveMultiple message).
You can Audit data can be viewed by connecting to the Office 365 Security and Compliance Center: Connect to https://protection.office.com > Search & investigation > Audit log search and select the Dynamics 365 activities tab.
