You can stop posting by attaching a dimension to the location and preventing that location from posting to your various general ledger accounts for inventory (set dimension posting restrictions)

If you want it to be available in the other parts of the system but just not in the sales transactions i think you should use a customization to fix that. But if you want it to not be available through out the system you could implement a security filter.
