When a new Bookable Resource Booking is made, it updates some fields (Dates) on the Workorder.
Can someone explain to me how to identify where this is happening.
I really need to turn it off as it is updating things we do not want updated.

You might need to check below:
Hi.
Field Service has plugins and other components to sync the work order, booking, resource, requirements, etc.
When you create a booking, the work order system status moves from unscheduled to scheduled for example.
It is not recommended to disable any of those components.
We might be able to suggest more solutions for you if you share more details about why you want to stop it.
