I am trying to setup a new project, I click Billing Settings Button, but the Labour Rate Table Type is grey and I need to be able to assign an Employee Rate Table against the project. Suggestions?

What type of Project are you setting up? I noticed that the Labor Rate Table Type is greyed out for Cost Plus and Fixed Price types of projects and it is available for Time and Materials Projects. So I would look to see what type of project you are working with as that field only appears to be available with a certain type of project.
