Entering Purchase Orders and Applying Sales Invoices to them

We receive purchase orders for services from our customers that encompass anywhere from 1 day of service to 1 year of service. We need to be able to enter the purchase Order into Dynamics 365 Business Central and then apply sales invoices to that purchase order to keep track of how much is availbale on the Puchase order at all times. Does anyone know what steps I would take to achieve this?

Or try Special Order, but like Drop Shipment, the standard does not display the amount, it is only associated by the document number.
