Whatever mentioned in my previous reply is OOB, meaning it is already implemented in your system and ready to go.

You would need to do a fit gap analysis, to map out what your organization currently does, and how to map it to existing CRM features.
In some cases, direct configuration will help, in other cases, customizations and extending the platform might be required.
Here are some high level overview of what the OOB features for Sales does:
1. Lead Managament
2. Account & Contact Management
3. Opportunity management
4. Quote management
5. Sales Order and Invoices (cannot track payments, that is more of the ERP side of Dynamics 365)
Sales cycle: Lead -> Opportunity -> Quote -> Order -> Invoice
