What do you suggest to set Dimensions in already posted documents?

Hello,
I just begin today to use the Dimensions. I have already set the Customer Dimensions (Country and Industry), and also Items Dimensions (Brand and Item Category). Now I want to set the dimensions in all Open documents, Posted documents, and Ledger Entries. The idea is to have all the year 2019 with Analysis based on dimensions.
What is the best way to populate all these dimensions in all needed documents?
