we have just recently changed our company name and logo i would like to know how you can change
the quote spread sheet

It depend on how your reports are developed. If your reports are taking the logo from the company setup in the NAV then you can easily change the company logo in the company setup.
If the report is been developed by just adding the logo from a different source then you have to talk to your partner and ask them to modify each report for you with the new logo.
What do you mean by quote spreadsheet ? and what do you want to change
