Double Opt-in for externally captured contacts

We're evaluating a trial of Dynamics Marketing 365 to see if it's a good fit.

I currently have a tick-box on my website account registration form that says "sign up for our newsletter". There's some back-end functionality in Dynamics 365 that adds the person to a marketing list. We currently do not use any double opt-in for that.

But moving to Dynamics Marketing 365, I'd like to send each new sign-up my DIO email and have them click the link to add themselves to the correct subscription list.

How could I do that? I can't seem to build any journeys to email and add to a list... or even to monitor a marketing list for new contact who I can then opt into my subscription list.

Any ideas welcome!
