Hi,
I working with a client that has GP 8.00g44 (Argentina localization) and needs to upgrade to 2010. I have a few questions about this requirement.
1.- Is 8.00g44 > 9.0.371 > 11.0.2044 a valid path?
2.- Can I use a lab enviroment with Windows Server 2008 R2 - SQL Server 2005 to test these two upgrades?
I'd really appreciate any tip. Thanks.

Thanks for the question; as Geoff has mentioned you will need to be on GP8 SP5 to start the upgrade due to using SQL 2005. If you were on a SQL 2000 then you could upgrade from any version of GP8 to any version of GP9. However to run GP8 on SQL2005 you need to be on GP8 SP4a or higher.
Your upgrade path from GP9 to GP2010 is fine; please refer to the following KB article for the supported upgrade paths from GP9 to GP2010:

As for the SQL version we don't support GP9 on SQL 2008 I would complete the GP upgrade on SQL 2005. You can then upgrade your SQL version to SQL 2008 as GP 2010 is supported on both versions of SQL as per the requirements page:

You need to service pack version 8 to SP5, which is 8.00g73, before you begin.
I am not sure if the lab environment will work until you have run service pack 5 for V8.
