As Becky said, there isn't any way to do that out of the box. You'd need a third-party auditing tool to do that (way easier than creating triggers and tables yourself).
I'd recommend Auditor from Rockton Software. It lets you set up audits and reporting on any screen (where the users can get prompted why are you doing this) or table (through SQL where the user doesn't know) in GP or third-party products you have. Reporting can be your own in SSRS or through SmartList.

Thanks, I think I found a work around. Each time a user cancels a PO, GP generates a PO Edited Status Journal with all the info I'm looking for after the fact...I'm going to have the users save that report and also add a note in GP when they cancel a PO.
There is no way to tell you cancelled a PO. This information is not stored any where to retrieve. My suggestion going forward is to limit the number of users who have access to the Edit PO window. The only other way to cancel a PO on the main PO Entry window is to put a qty canceled in the remaining qty on the PO, if it's the only one on the PO it will cancel the entire PO.
