I am setting up email configuration in my crm instance (dynamics 365 online v9).
what is the drawback on selecting the Synchronization method 'Appointments, Contacts and Tasks' to none? can not find nay doc

As suggested by other above, this is used for syncing between CRM & Exchange. If you set it to none for any user then these records will not be sync for that user only.

"Dynamics 365 can still receive synchronized views, contacts and tasks from Outlook. " do you mean that the system will auto get the outlook contacts be on crm instance? i tried to create contacts on outlook desktop but it does not appear in my crm.

If you only set this user's mailbox, this will not affect other users.
Also, please make sure that the synchronization method of Email in the system settings is not None.

If we select the Synchronization method 'Appointments, Contacts and Tasks' to none, then only for this mailbox, Dynamics 365 for Customer Engagement apps will not sync appointments, contacts and tasks with Exchange Online or Exchange Server.
That is, Dynamics 365 can not send synchronized appointments, contacts and tasks to Outlook.

i want to set it 'none' for one user. does this affect others? if i set it 'none', it means those appointment/contacts won't be synced to outlook/exchange , right?
This controls whether the CRM appointments, contacts and tasks are synchronised with the corresponding Outlook data, so it depends if this functionality is desired. By default this synchronises contacts based on the owner (i.e. it only syncs contacts owned by the user), though this can be changed, and it's worth considering if this is appropriate before you turn on the sync
