I am noticing that when ever we send an email from within the CRM that the owner defaults to Admin. Is there a way to change the owner field to be populated with the name of the current user?

You are probably using a back-ground workflow, and it's running in the context of the workflow owner. In that case all you can do is re-assign that email to another user using "assign" step in the workflow.
If you change it to a real-time workflow, though, it can be configured to run in the context of the user who "kicked off" the workflow. and, then, that'll be the owner of the email.
