For the COM addin, there are only two options for the browser that can be defined by the WebBrowserType Dword key at HKEY_CURRENT_USER\Software\Microsoft\MSCRMClient\{orgid}
0=IEHosting
1=WebFormsHost
I'm not aware of a method to then force it over to Edge.
The replacement for the COM addin (Dynamics 365 App for Outlook) now uses Edge natively in Outlook if you are on click to run version of Office and monthly or current channel builds.
