I have a "What If?" manufacturing model spreadsheet that uses data from 6 different Smart Lists I export of our of GP to feed the model. Some of these exports are then PIVOTED, before VLookups on the main model page provides me the pieces I need to run the what if models. Is there a way to have Excel go out and capture these SmartLists automatically, every time I open the spreadsheet to refresh the data?

Excel can go directly to the GP tables and access data and refresh not only each time opened but on request. Smartlist pulls a static set of data to screen then dumps to Excel. You should skip Smartlist and read directly from the tables. Use an ODC connection to get the data.
