Isn't there a setup option where you can select to see Supervisor Name, not code, in Employee Maintenance? I cannot remember where that option is. Can someone remind me please?

I think your are referring to the HR user preferences window. "User Preferences" > HR button (thus, it does require HR to be installed and registered for this functionality to work).
