What kind of disks to use for the server? Raid 5 or Raid 10? We are using Nav2013.

Everybody will have different opinion about this. Some people use Raid 5, others prefer Raid 10.
Raid 5 will be less expensive. But, Raid10 is typically going to perform better and good for recovery.
Again, different people have different opinion. You just need to do research and make a choice.

You can apply normal database principle to NAV.
There is no right or wrong answer on this. You can get the recommended one by analyzing your database and business process. I would say just pick the one you are comfortable with.
