To be able to track the deleted sales orders, you need to select the check box on AR Parameters for "Mark Order as Voided".

Once deleted, you will be able to track the deleted ones and also see when it has been deleted by to add fields of created date time for the header.

Sales and Marketing -> Inqiries and Reports- > History
