In the Activites entity, I see My Activities and there is a Due drop down, how can I change it from sying "Today or earlier," to just "Today", and then how can I change the filtering so that it just shows today when Today is selected?

    Hi partner,

Unfortunately, it is impossible to add custom options into this filter.

So there are two ways to filter today's Due Date activities.

    1. Set the filter on the view.

    2. Create a personal view that filter today's Due Date activities.

Is there a way to make the Due field, to just be a date with the Time not being auto filled in?  There are times where I don't want to associate a time so  I would like this blank.

You cannot leave the time part empty only for certain records. If you want to change, you need to change the Due field to Date Only but by doing so, Due field will only show as date for all records. However, the system will store the time part as 00:00 (midnight) for the timezone of the user who fills in the data.
