We are working on a project with consulting team. They only have access to our web services.

I want to unpublish all web services and only publish selected web services. Is it any consideration here? Am I going to break anything if I unpublish all web services?

Any other method that I can limit access of a specific user to certain web services?

Not with standard permissions. I’d look at developing a specific set of pages that expose only the data you want

Thanks Josh for response.

My challenge is they need access to SO Header. But I do not want them to see some fields in SO header. Is it anyway to limit their permission to not see those fields but see the rest of SO header fields?

Break no. Web services are optional based on your solution requirements. Worth noting that permission sets still apply to web services. Create a permission set for the objects you are going to expose and apply that to the consulting user
