I would appreciate any help in educating me on how to delete a contact from an opportunity.
Also, how can I delete a draft that I have created?

Do you see a delete button on the record or deactivate if you are an admin?

First and the foremost you should be having delete permissions to delete a record .
Assuming that you have delete rights, if you want to delete the contact from a sub-grid on Opportunity record; upon hovering on a record in the sub-grid a delete button should be visible. If it's a lookup field on opportunity, clicking on the field takes you to the record where in you can see a delete button on the top user controls bar (or) it could be in the hidden in the more controls button represented as (...).
If you still don't see the delete button, then you do not have rights.
There is no delete button so it must be a permissions issue.
