Limit who can move an Opportunity between stages

We are in the early stages of rolling out our CRM to our sales organization, we would like to keep the ability to move an opportunity between stages to just the System Administrators yet still allowing the sales folks to update certain aspects of the opportunity.

I tried only enabling the Sales Process to the Sales Administrator and have made adjustments to the Security Roles, however as long as the person is on the Sales Team he or she can make any edits/updates.

I understand the concept that if I'm on the team I can edit/update, we just want to keep that Stages process close to the vest for now until everybody is fully trained and understands what needs to be collected prior to moving it.

Any creative suggestions where this can be accomplished without requiring code?

    Please feedback on my approach is highly appreciated :)

    To achieve the requirement:

    1. Create minor customisation on systemuser entity with two options called "Sales Admin" to flag the user is a sales admin.

    2. Create the real time workflow on opportunity entity that set: Start When: Before > Record fields change (the stage), Scope: User, Execute as: The user who made changes to the record.

    3. Add Workflow step to check condition: Modified By (Users) with Sales Admin = No/False

    4. Then Add Stop Workflow Step with status: Canceled, set the Properties of the Status message, e.g: "Only Sales Administrator Could Modify Opportunity Stage".

    5. Save and Activate the WF.
