Have a process to create a custom activity (custom entity record) when an opportunity is progressed to a specific stage in CRM workflow. The custom activity would be created by the system and linked to the opportunity. When the opportunity is progressed to another specific stage, the custom activity would auto complete.

If you have December 2016 update, you can add a workflow to the BPF stage:
www.microsoft.com/.../create-a-business-process-flow.aspx
So, for example, you might add a lookup from opportunity to custom activity, use workflow at stage1 to create an activity and to store it in the lookup.. then use workflow at stage2 to close the activity (which you will have access to through the lookup)
