Uninstalling extensions in Sandbox environment

If we uninstall an extension in the Sandbox environment would the extension still be active and installed on the Production environment?

    That's right, the environments are separate, the activities you do in one do not affect the other environment.
    Likewise, activities related to the installation or uninstallation of extensions.

    Yes, the functionalities are separated between environments.
    The same way You can add extension to sandbox and test it out, before You add it to Production environment.
