A user was entering a sales orders today , while he work he review one order that was one moth back , then he continue with new orders . User did not notice that order date changed as the last order he was review , and all orders was transfer to invoices, the result is all new orders “document date” is before the “create date”. Is there a way the force document date for new orders to be as creation date in GP10?

Change the Document Date in the SOP Setup to user date..
No option available setup document date as a creation date in GP. Only you can setup default Document Date for Sales Transaction Entry as per below 2 options.
1. Previous Doc. Date
2. User Date
Please have a look on the below information from GP help file about the above 2 options.
Document Date
Select which date you want to appear as a default date in the Sales Transaction Entry window when you open the window. Select "Previous Doc. Date" for the last document date you entered to appear as a default; select "User Date" for the user date to appear as the default document date.
Better you can choose your own document date at the time of transferring sales documents.
Hope this helps!!!
