Hello,
This question is based upon having a Salesforce background. Can you add a custom "object" with custom fields in Dynamics 365?

A "Custom Object" in SalesForce is equivalent to a "Custom Entity" in Dynamics 365. And yes, you can create a new custom entity on Dynamics with custom fileds.
