Is there a tutorial available on how to use the Item Recall and Quality Hold modules in NAV?
out of box, I don't know if there is item recall and quality hold modules. If you have those installed in NAV, please provide screenshots. If so, it is very likely 3rd party add-on.
As appliwin mentioned, the two modules you mentioned do not exist in NAV.
I'm not sure of your specific needs for these two modules, but I think you might consider the following modules instead.
Item Recall: Item Journals
