In Business Central, you can turn on Change Log for the Customer Card and select specific fields you would like to track, Insertion, Modify, and Delete. It will record any of these changes and you can see these on the Change Log Entries page.
If you are looking for a way to tell the Approver specifically upon receipt of the Approval email, I can only think of an extension to write the fields effected into the email message. I think its easier to show Change Log.
