how can I reflect the planned vacation of the resource on the resource capacity and availability ?

Altering the capacity data to match would be tricky just because it would be manual or require you to do the update on a periodic basis. My recommendation would be to create a job or an "internal" customer. You never have to bill from the job you just use it for planning time that isn't for tasks being carried out by the resource. All you need is a job planning line for the resource record on the specific date. This will update the resource availability page accordingly and show as a value in the "Qty. on Order (Job)".
