Your way could work. I was thinking of two other things.
1. Create a zero value sales order so you can create a warehouse shipment/pick for the outbound activity. Would mean correcting the stock adjustment made by the job journal.
2. Use a specific location for jobs. Have no stock in that location. Use stock keeping units to state the location gets replenished with transfer orders from your actual warehouse. Means you get the outbound activity in the warehouse.
