you usually create a lead, on the lead create a phone call activity and then if it comes off you convert the lead into an opportunity.
I don't think CRM out of the box converts phone activities into opportunities. If you wanted to do this you could do it using a workflow or a dialog.

That should be pretty straight forward actually. Check this blog. You should be able to select Convert To and select Opportunity.

Yes, there is a possibilty from which we can Convert a Phone call into Opportunity & also a case
when you Create a Phone Call & save it.u can see an option like Convert to with help of that we can convert a phone call into Opp or case.
